Sausage and Pepper Breakfast Casserole

Per Serving: 313 calories, 21.5g fat, 11g carbs, 19g protein


1 cup sliced Spanish style ready to
eat semi-dry cured sausage
1 small onion, thinly sliced
1 red pepper, diced
7 eggs, whisked
¼ cup milk of choice
1 tablespoon minced fresh parsley
2 teaspoons oil
½ teaspoon dried oregano
Sea salt and pepper to taste
¼ cup grated cheese of choice
Organic butter or oil
Sea salt and pepper to taste
Cayenne pepper to taste for extra
spice (optional)


  • Preheat the oven to 325F.
  • Prepare a square casserole dish by using a small amount of oil or butter to grease all sides.
  • Warm 2 teaspoons of oil over medium low heat and sauté the onions and diced red pepper until soft.
  • Add the dried oregano, sausage slices and some sea salt and pepper and continue to sauté for a few minutes more.
  • In a medium bowl, whisk the eggs and add the milk, fresh parsley and additional sea salt if desired.
  • Place the sausage, sautéed peppers and the onions to the casserole dish.
  • Pour the egg mixture over top of the meat and onion/pepper mixture, add the grated cheese and mix well.
  • Place into the preheated oven and bake for 35 minutes or until the until eggs are cooked through.
